The N2 process category shows the relative "fruitiness" of this lot so here the coffee cherry has really influenced the aroma and flavour of the coffee. Ripe banana, juicy berry fruits, lavender and a very chocolaty flavour. Good body and a nice brightness too. Hand roasted on our Loring Smart Roaster.
Tchembe is a coffee selection based upon its special flavour nuances, where Ninety Plus Coffee's innovative N2 processing imparts a high fruit influence from the natural coffee cherry into the coffee beans, resulting in the complex, aromatic flavours experienced here.
The coffee is very versatile, so the roasted coffee beans can be used to extract an exciting single origin espresso but Tchembe makes great brewed coffee too.
Origin: Amaro region
Arabica: Heirloom varietals, primarily “Bolo”
N2 Process: Profile drying of the whole cherry, with control of cherry
ripeness, sugar concentration and microbial activity
NP Level 7: Tchembe is a unique selection by Ninety Plus Coffee, who work with producers to process, cup and ultimately prepare coffees based on quality, quantities and the inputs of the producers.
Ninety Plus Sensory Room: "Generally bright and thick with cocoa butter and banana liquor flavour and a characteristic, pleasantly dry, slightly chalky mouth-feel that lingers in the finish."
Roasting: All of our Micro-Lot coffees are artisan roasted in tiny batches on our eco-friendly Loring “Smart Roaster” (from sunny Santa Rosa, California.)
