
Types of Coffee
Our
emphasis is on revealing the character and potential
of a particular coffee growing farm, cooperative or
region and considering the influence of those localised
communities micro-climates and terrains within a cultural
context.
What can that farmer - or group of farmers - do with
cultivation, harvesting and processing techniques to
make that coffee unique? And how do those influences
affect the outcome in the final cup of coffee?
We also have a role to play in supporting that, through
the selection of only outstanding coffees, through careful,
expressive roasting and through a commitment to telling
the background story of each coffee.
The blending of roasted coffee is without doubt a fine
art and craft, particularly for espresso, but it can
also be a useful way of hiding below standard coffee
or finding an excuse to come up with a fancy blend name.
Taking coffee to its simplest form, and right down to
root level, is not only endlessly fascinating but provides
amazing taste potential.
Your appreciation and enjoyment of these coffees is
the only way to ensure that this potential has been
fulfilled.

So,
what isnt a distinctive coffee?
We do
not roast commercial grade coffees (including Robusta),
novelty coffees or generic coffees (think Brasil Santos)
for Grumpy Mule and our coffees are not soluble and "instant".
Admittedly, real freshly roasted coffee takes longer to
prepare but it is well worth the extra time and effort.
